King Arthur Flour gave us a box of their gluten-free pancake mix to sample, along with their delicious brownie mix that already received rave reviews from CATB. Thanks, King Arthur Flour! We’ve been holding off on making this because we wanted a weekend to ourselves with no rush to make pancakes.
I totally forgot that I had to dog-sit, so we had to cook these in a non gluten-free household. I asked Non-GFBF to bring over all the ingredients we needed, but we ran out of eggs. Last night I found a gluten-free sweet potato brownie mix that was nearing death by expiration date and felt pity on it. So this morning, I ran out to our local farmer’s market, and then just hoped for the best that all the ingredients we were subbing out instead of the real thing would still keep these edible!So much for being a stress-free weekend, right?
We subbed out a lot of ingredients because we wanted to use ingredients that we had on hand. We figured if a mix was good enough to be awesome with coconut milk and Smart Butter, then it’d be a winner. And it was!

I thought the pancakes were really good. Of course, they were extra awesome because they had chocolate chips in them. Non-GFBF said that people probably wouldn’t notice a difference if you didn’t tell them it was gluten-free. They cooked really evenly and we were very happy with the flavor. I think the only difference I could tell was that we used fake butter (Smart Balance) instead of real butter or oil (or even apple sauce). The mix itself was very even, and very good. I haven’t tried a lot of other gluten-free pancake mixes, but after this one I’m not sure I’d go shopping around for more!
It’s available at stores like Whole Foods and Sprouts (in my neck of the woods), and online for $5.95. Not only is it gluten-free and certified (as stated on the website, they are Certified Gluten-Free™ by the non-profit Gluten-Free Certification Organization, a program of the Gluten Intolerance Group), but it’s soy-free and nut-free as well.
These also make waffles as well. As noted on the site, you just prepare batter as directed on the box, but increase the milk from 2 to 2 ½ cups. Bake waffles according to your iron’s directions; using a smaller amount of batter results in thinner, crisper waffles.
This box makes about 16 4″ pancakes. As prepared it’s 280 calories a serving, which is about 2 pancakes. I’m sure mine are more than that thanks to the coconut milk and the chocolate chips, but they’re awesome so I don’t even care! We had so many leftover pancakes. I would definitely recommend this box for a family of 4, or you could cut the recipe in half and only make 1/2 the box at a time. I know we (just the two of us and maybe a dog or cat) wouldn’t eat more than that at a time.



Ingredients: whole grain brown rice flour, potato starch, tapioca starch, rice flour, sugar, baking powder (sodium acid pyrophosphate, sodium bicarbonate, cornstarch, monocalcium phosphate), natural flavors, salt, xanthan gum.

My boyfriend would make me breakfast if I won these, he’s Celiac and been wanting pancakes. Of course, there is a high risk it would turn into sriracha pancakes…
If you had those pancakes, there’s a high risk I would want to come over and pair it with a bloody mary.

I haven’t tried this brand before, but I would really love to do so, because I really love pancakes! I’m hoping I could try on a new option.

I made King Arthur Flour muffin mix a month or so ago and talked about it on the site. Check it out and see if it’s a brand you find interesting. I liked them! As for oatmeal cookies, I did a recipe on here using ripe bananas and Bob’s Red Mill gluten-free oats that was pretty tasty!
